Broccoli and Apple Salad

Recently I came across this lovely broccoli salad recipe which is fresh, tasty and healthy. Moreover it is a great winter side dish.



1 broccoli: julienned

1 apple: cut into small slices

1/4 cup raisins

1/4 cup cashews: chopped in halves or quarters

parmesan cheese or graviera cheese: very finally sliced with a knife.




For the dressing:

1/2 cup of Greek yoghurt (or 1/4  cup of mayonnaise and 1/4 cup of Greek yoghurt)

2 table spoons of apple cider

3/4 tablespoon of honey

salt, pepper



You can use fresh broccoli or you can toss it together with a sesame oil for 2 minutes in wok that you closed with a lid.

On a bed of broccoli arrange apples and toss raisins. Pour over your dressing and mix it well.

Sprinkle with cashews and cheese.

Brocoli is high in vitamin C, K and many other vitamins and minerals. It prevents osteoarthritis, reduces cancer risk, reverses heart damage caused by diabetes and by protecting from UV light it prevents skin cancer.
