APPLE SPICED CAKE

Delicious spiced cake with apples, easy to make anytime you have 2 spare apples

Ingredients:

2.5 cups of flour

1 cup milk (I used almond milk)

1 cup sugar (coconut, raw cane, etc)

2 eggs

1 sachet of baking powder

pinch of salt

2 table spoons of cacao powder

1/2 cup of oil (olive oil or similar)

2 big apples- grated

1 cup of raisins-and-nut mixture

Spices: 1 teaspoon of cinnamon, 1/2 teaspoon of clove, 1 spoon of ginger powder.

Topping: I usually combine home-made marmalade, dark or white chocolate

Instructions:

Prepare your baking pan (either grease it with butter and flour or use a baking paper), preheat your owen (180 C/ 350 F)

With a hand-held mixer whisk together the eggs and sugar.

In a separate bowl mix together flour, baking powder, spices, pinch of salt and cacao powder.

Add the flour mixture into the egg mixture in 3 doses and at the same time pour also milk and oil to keep the mixture smooth.

Add raisins, nuts and apples and pour into the baking pan.

Bake for 30-35 minutes, test if the cake is ready with a thin wooden stick.

Use your topping and let it cool off.

Benefits of baking with olive oil:

Olive oil cuts back on the cholesterol and saturated fat content of desserts. The cakes are tasting lighter and it  allows the flavor of the other ingredients to come forth. It contains vitamin E which has antioxidant qualities.
