3/4 cup of sugar (coconut, raw cane or brown)
1/2 cup of olive oil
3/4 cup of milk ( I usually use almond or coconut milk)
1 and 1/2 cups of flour
2 spoons of baking powder
1 vanilla bean or 1 small spoon of vanilla extract
pinch of salt
Flavors: Here are few of my favourite toppings
- Strawberries and shredded chocolate.
- Apple slices and brown sugar with cinnamon. I like to add also almond flakes into the dough.
- Chocolate chips.
Beat together 2 eggs with a cup of sugar and a content of 1 vanilla bean. Add an olive oil and milk.
Combine all the dry ingredients and add them into the wet mixture, mix well.
Pour the mixture into prepared cups, add your topping and make for 20 minutes on 180C.
Let it cool on a wire rack.
