All time classic breakfast cake or afternoon snack.


2 eggs

1 cup sugar (brown, coconut, raw cane, any you like)

1/2 cup of oil

3 bananas (2.5 mashed and 0.5 for decoration)

1 table spoon of vanilla extract

1 and 1/2 cup flour

2 tablespoons baking powder (equal to 1 small sachet)

1 teaspoon cinnamon

pinch of salt

optional: handful (or more) of raisins and almond flakes



Mix eggs with sugar and once incorporated add oil, vanilla extract and bananas. Mix all the dry ingredients together and it to the wet mixture. Add raisins and almond and pour it into a prepared loaf pan. I usually cut lenghtwise half banana and decorate the top of the banana bread with it.

Bake for about 30 minutes on 180 C and then cover the top and bake for another 15-20 minutes until the wooden stick comes out clean.
