CHERRY CRUMBLE

The best cherry crumble. All time classic brunch item at my retreats.

Ingredients:

For the crust and crumble

1/2 cup melted butter (can be also coconut butter)

1 cup of flour

3/4 cups of oats

3/4 cups of sugar or 1 cup of honey

pinch of salt, cinnamon to taste

 

 

Cherry layer:

3 cups of cherries without pits

2 tablespoons of cornstarch (I used vanilla flavoured)

2 tablespoons of lemon juice

1/3 cup of sugar or 1.2 cup of honey

 

Directions:

Prepare a baking pan (over it with a baking sheet). Mix the ingredients for crust until you have well-formed crumble pieces. Using fingers press 2/3 of the mixture to the bottom of your prepared baking pan.

Mix the ingredients for cherry layer and add it on top of the crust.

Sprinkle with the remaining crumble mixture.

Bake for 45 minutes on 180 C. If you see the crumble is getting too brown, cover it with a baking paper.
