Lemon cookies from freshly picked lemons from our gardens.


0.5 cup of butter

1 of cup sugar (coconut or similar)

2 tablespoon of fresh lemon zest

juice of 1 lemon

1.5 cup flour

0.5 teaspoon of baking powder

pinch of salt




Using a hand mixer cream the butter with sugar, it takes 3-5 minutes until the sugar melts. Add lemon zest and juice and keep mixing.

Combine your dry ingredients ( flour, salt and baking soda) and add them to the wet mixture. Use your hands to mix it together and create a smooth non-sticky cookie dough.

With your hands roll about 25 cookie balls, compress them in the middle and bake them for about 10 minutes on 180 Degree Celsius. Don’t forget to use a baking paper or similar at the bottom of your baking tray!

With coffee or wine or just anytime!
